Banana Bread with Cream Cheese Frosting

This past week I hosted a tea party. I have been wanting to make this amazing banana bread recipe for a long time. What better chance than a tea party! It just makes the right combo to petite minis that are served with high tea. Traditionally it is made in a loaf pan. For me, I like to make it look like dessert. You could help yourself for breakfast too, it’s called bread for a reason ;).

Without further rambling here’s the recipe. Enjoy with your loved one!

P.S. I forgot to take a picture of fully frosted banana bread before cutting them into squares.  Also, I’m using half of the recipe mentioned below, you might wonder why you see only one egg in the picture instead of two.

Banana Bread Recipe:

Ingredients:

2 large eggs

1/2 cup butter, salted

3/4 cup brown sugar, packed

1/3 cup buttermilk*

2 large bananas

1 tsp vanilla extract

2 cups plain flour

1 tsp baking soda

1/4 tsp salt

1/2 cinnamon powder

1/2 cup walnuts, chopped

 

*Buttermilk can be made by adding 1 tbsp. of vinegar to 1 cup of milk. Set aside for 10 minutes before adding to the mixture.

Method:

Sift flour, salt, cinnamon powder, baking powder in a bowl and set aside.

Get all the wet ingredients together except buttermilk in a mixing bowl eggs, sugar, butter, vanilla, bananas (mash them with a fork). Cream all these together with a hand blender or stand mixer till it becomes smooth.

Slowly add one part dry ingredients to the wet mixture until blended and then add one part buttermilk. Make sure not to overmix the flour. That’s key to making a perfectly soft and light banana bread.

Finally add in walnuts. You can use pecans if you like.

Pour the mixture in a loaf pan or a square 8*8 inch pan (like I have used here). Bake at 350 deg. F for 30 minutes or until toothpick comes out clean. Remove from oven and allow it to cool for 10-15 minutes. Transfer to a cooling rack to complete the cooling process.

Cream Cheese Frosting Method:

In a bowl mix together softened cream cheese, butter, milk and confectioner’s (powdered) sugar until the mixture becomes creamy and smooth.

Spread it over the cooled banana bread, sprinkle chopped walnut on top. Let it set in the refrigerator for 20 minutes. Cut it into slices or squares for serving!

Perfect for a tea party!
