Garlic Shrimp Noodles

Growing up our meals involved a lot of Chinese food. Not some take-out restaurant style. But home cooked!

“Indo-Chinese” is a mixture of Indian and Chinese cuisine. When Indians cook any other cuisine they infuse it with Indian spices. That’s how my mom made it!

I like tweaking my meals with spinach and paneer. This time it’s spinach. I try to incorporate as many veggies into my kids diet as possible (they don’t even realize it 😉).

My mom made sure we had the most healthy meals. Noodles are the most comforting of all. It’s kid’s favorite and a quick fix.

Perfect for rainy, muggy day like today!

My kids absolutely loved it!!!

 

Garlic Shrimp Noodles:
(Indo-Chinese)

Ingredients:

1 pkg Chinese noodles

1/2 cup frozen mini shrimps

2 cloves of garlic

Bunch of spinach, chopped

2-3 tbsp. ketchup

1 tsp. soy sauce

1 tsp. vinegar

1 tsp turmeric powder

1 tsp. cumin powder

1 tsp. coriander powder

Black pepper to taste

Salt to taste

1 tbsp. of olive oil

Method:

Boil noodles as per instructions. Strain, set aside with oil sprinkled on it for the noodles to not stick together.

In a wok, heat olive oil, add in garlic and sauté for a couple of minutes on medium high heat. Put frozen shrimps, let it thaw in the garlic oil and fry for a few minutes.

Add all the dry masala powder followed by Chinese sauces. Let all the ingredients come together (you may have to sprinkle some water for the spices to not burn).

Finally add in the boiled noodles and chopped spinach. Mix well together, simmer covered for 2-3 minutes and voila!

Hot, yummy, garlicky shrimp noodles are ready to devour!!!
